Re-Dressed
Posting Date: 04/27/2012

While shopping the other day, I met a woman who said she lost one of her favorite recipes from my column and asked if I could run it again. This was a recipe I did over a year ago and actually, I have had several people ask for it.

This salad dressing does have a funny story. It was a house dressing at a very popular restaurant in Georgetown, which is an affluent section of Washington, DC. The recipe was a secret and it seemed impossible to figure out exactly what was in it. The dressing was the most popular item on the menu. The chef was fired and to get even, he published this recipe in the Washington Post. It is no longer a secret and I would have never guessed at the simple ingredients.

In the picture, are the most wonderful little tomatoes that make any salad delicious. This is a heavy dressing and it works best with a sturdy lettuce such as romaine or iceberg. It was always served with a slice of cucumber, tomato and garlic croutons. I also like to use it on my grilled chicken salad. I have served this as a dip for fresh vegetables too.

A food processor will make quick work of the chopping of the parsley and grating the carrots. But, you can do this by hand, just make sure they are finely chopped and grated. I keep this in the refrigerator and it should last about 2 weeks.

This dressing can now be called “Your House Dressing” and let's keep that as our little secret.

HOUSE DRESSING

½ cup finely chopped parsley

1 cup finely grated carrots

½ cup buttermilk

1 ½ cups mayonnaise

¾ tsp garlic powder

1 tsp onion powder

¼ tsp garlic salt

1/8 tsp salt

Prepare parsley and carrots using a food processor or manually chop them. Combine the buttermilk and mayonnaise with the spices and stir until smooth. Stir in the parsley and carrots. Keep refrigerated.

Makes about 1 quart. Recipe can easily be cut in half for a smaller portion.

Susan Lang makes greeting cards which are for sale at Stephen's Hair & Boutique located at 312 W. Mesquite Blvd. #12 in the Bull Dog Shopping Center. Each card is different and has a message sure to make you laugh and some also come with recipe cards. While you are there, grab a new outfit for dinner!
